On February 28th, 2017, the Grand Velas Los Cabos resort debuted its Grand Velas Taco. Priced at $27,000, the first-ever purchase of the dish heralded its placement as the most expensive non-dessert meal in the world, with the previous record having been a paltry $12,000. While the investment necessary to enjoy what amounts to six bites of a Mexican staple may strike many people as being patently absurd, concerns can be easily quelled by a description of what the dining experience includes: Layers of Kobe beef and lobster are held within a gold-infused tortilla, then topped with Beluga caviar, black truffle brie, and 24-karat gold leaf, resulting in an aroma and an appearance that must be withheld to be believed. An arrangement of exotic hardwood serves as a plate, and diners are encouraged to pair the offering with a $150,000 bottle – itself adorned with platinum and gold – of Tequila Ley 925. According to Chef Juan Licerio, the delicacy, technique, and harmony are absolutely worth the cost of a decent automobile.
Despite the apparent uniqueness of the Grand Velas Taco, it is far from being the only meal of its kind. The Golden Opulence Sundae – served by Serendipity 3 – boasts a price tag of $1,000, and has a list of ingredients to match: Tahitian ice cream is topped with gold leaf, a tiny dish full of "dessert caviar," and truffles – of the chocolate variety, this time – then served in a crystal goblet. The White Truffle and Gold Pizza (made by Margo's Pizzeria) is another such contender, with a price of $2,420 for a pie constructed from buffalo mozzarella, white truffles, and gold leaf. Reports vary on what is it served atop, but it can be reasonably assumed to be something at least moderately expensive. Numerous other meals from around the world follow in a similar pattern, combining rare and notorious ingredients with presentations that are sure to delight the eye as much as they tantalize the tongue.
Having learned of these meals – and following in the tradition set down by our founder – the chefs at Chateau Roi Colombe devoted themselves to analyzing the details that give a premium dish its price.
